Objectives:

  • Further improvement and optimization of initial oat+lentils intercropping initiatives, with the objective to test other GL species to be at the forefront of a growing plant-based market
  • Develop and test value chains based on the harvested crops, B2B and B2C.
  • Provide a feasibility study based on fermentation strategies in a novel entrepreneurial start-up company focusing on food service; restaurant and gastro scene.
  • Develop and test the use of legumes in public kitchens, as a part of the strategic shift from meat-based proteins to proteins from legumes.

As a guidance, the successful Danish transition towards organic farming practices was achieved through a combination of policy, capacity building, value chain collaboration and active engagement of public kitchen staff. This is part of the CICS strategy to engage public kitchens in the conversion to more intercrop-based plant protein market opportunities.
